The complex of Fumane, now called "Corteforte", arose as a defensive system in the Middle Ages. Today is a working farm producing classic wines of Valpolicella DOC Valpolicella Ripasso, Amarone and Recioto DOC and DOCG. Is also preserved the tradition of an ancient wine, Recioto "Amandorlato", considered the father of Amarone. The vines, trained with the traditional method of Veronese Pergola, extending some three hectares at an altitude between 150 and 300 meters on volcanic soil, with red basalt and limestone. The grapes belong to ampelographical tradition of Valpolicella: Corvina, Corvinone, Rondinella, Molinara, in addition of Oseleta, Dindarella, Pelara. The drying takes place in the fruit and all the wines, aged in used barrels of French oak, are distinguished by their strong character but in respect with the tradition. Three distinct types of Amarone are produced: the "Terre di San Zeno"; the "Osan Vineyards" small plot "cru" which produces a few hundred bottles per year and reserves produced only in the best years. The production is completed by red IGT "Concentus" and "Rubro".
