The company was founded in 2002, when Morini’s family feels the needed to produce directly quality wines, after 40 years collaboration with the local winery cooperative in Illasi. The first location was in Illasi, in the historic Morini’s family estate, in two rooms adapted for the winemaking and storage of oak barrels. For these operations the winery entrusted to a professional winemaker team. The wines produced were: Amarone, Valpolicella, Soave and in the suitable years a white Passito. In 2005, thanks to significant economic efforts, the new winery of 1800mq was built, on two floors and equipped with all the new technologies that the winemaking needs. From the harvest 2012 the production, directly managed even in the vinification phase, added to the historic wines, two new wines: a Ripasso and a Recioto della Valpolicella. Today, Latium can count on a vineyard area of ca 40 ha, that allow a production of high quality, which amount currently around 150,000 bottles/year.
